    Prepare the Ingredients

    Wash and chop all the vegetables: bell peppers, red onion, zucchini, and garlic cloves.

    Cook the Rice

    If you haven't already, cook 1 cup of rice as per package instructions to yield 2 cups of cooked rice.

    Prepare Optional Toppings

    Slice the avocado, chop the fresh cilantro, and cut the lime into wedges.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.

    Add Remaining Vegetables

    Add the bell peppers, zucchini, and corn to the skillet. Season with ground cumin, salt, and black pepper. Stir well and cook for about 5-7 minutes until the vegetables are tender.

    Add Beans and Rice

    Stir in the black beans and cooked rice. Pour in the soy sauce and mix everything together. Cook for an additional 2-3 minutes until heated through.

    Assemble the Wraps

    Lay a tortilla flat, spoon the veggie mixture onto the center of the tortilla, and fold in the sides before rolling it up tightly.

    Serve the wraps warm, topped with sliced avocado, fresh cilantro, and lime wedges on the side.
