Preparation of Rice

    Rinse and Cook the Rice

    Rinse 1 cup of white rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice, 2 cups of water, and 1 tsp of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed.

Preparation of Fries

    Cook the French Fries

    Preheat the oven according to package instructions for the frozen French fries. Spread 4 cups of frozen fries on a baking sheet and drizzle with 2 tbs of vegetable oil. Bake in the oven for 20-25 minutes, or until golden and crispy, flipping halfway through.

Sautéing Vegetables

    Prepare and Sauté the Vegetables

    While the rice and fries are cooking, chop the bell peppers, onion, tomato, zucchini, and carrot into bite-sized pieces. Mince the garlic. In a large skillet, heat a tablespoon of oil over medium-high heat. Add the minced garlic and sauté for 1 minute until fragrant. Then add the chopped vegetables and sauté for about 5-7 minutes, stirring frequently until they are tender.

    Season the Vegetables

    Once the vegetables are tender, add 3 tbs of soy sauce, 1 tsp of black pepper, and 1 tbs of chopped cilantro to the skillet. Stir to combine and cook for an additional 2 minutes to allow the flavors to meld.

    Plate the Dish

    To serve, place a portion of rice on a plate, top with the sautéed vegetables, and add a generous helping of crispy French fries on the side. Garnish with additional cilantro if desired.
