Main Ingredients

Method

Preparation

  1. 1

    Rinse the Rice

Place the long-grain white rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.

  2. 2

    Sauté Vegetables

In a large saucepan or pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 5 minutes or until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

  3. 3

    Add Spices

Sprinkle the cumin powder, salt, and black pepper over the sautéed vegetables. Stir well to combine and let cook for another minute to release the spices' flavors.

  4. 4

    Cook the Rice

Add the rinsed rice to the pot, stirring to coat it with the vegetable mixture. Pour in the vegetable broth or water, bring to a boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.

  5. 5

    Add Beans

While the rice is cooking, drain and rinse the canned black beans. Once the rice is done, gently fluff it with a fork, and add the black beans. Stir to combine and heat through for about 2-3 minutes.

  6. 6

    Garnish and Serve

If desired, sprinkle the chopped fresh cilantro over the rice and beans before serving. Adjust seasoning with extra salt and pepper to taste. Serve hot.
