Prepare the Chicken

Marinate the Chicken
In a large bowl, season the quarter chicken with salt, black pepper, garlic powder, and paprika. Let it marinate for at least 30 minutes.

Prepare the Batter
In another bowl, mix the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. In a separate bowl, whisk the egg and cold water together until well combined. Gradually add the wet mixture to the dry ingredients and whisk until smooth.

Heat the Oil
In a large, deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Chicken
Dip each marinated quarter chicken into the batter, ensuring it is well coated.

Fry the Chicken
Carefully place the battered chicken in the hot oil, frying in batches if necessary to avoid overcrowding. Fry for about 10-12 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Drain and Rest
Once cooked, remove the chicken from the oil and place it on a plate lined with paper towels to absorb excess oil. Let it rest for a few minutes.

Make the Fries
Peel and cut the potatoes into fries. Rinse them in cold water to remove excess starch, and then pat them dry. Fry in the same oil used for the chicken until golden and crispy, about 5-7 minutes. Drain on paper towels and season with salt.
