Preparing the Potatoes

    Boil the Potatoes

    In a large pot, add the potatoes and enough water to cover them. Add 1 tsp of salt. Bring to a boil over medium-high heat and cook until the potatoes are tender, about 20-25 minutes.

    Cool and Slice

    Once cooked, drain the potatoes and let them cool slightly. Once cool enough to handle, peel the potatoes and slice them into rounds.

Making the Huancaina Sauce

    Blend the Ingredients

    In a blender, combine the queso fresco, aji amarillo paste, evaporated milk, vegetable oil, garlic clove, lime juice, and salt. Blend until smooth and creamy.

    Adjust Seasoning

    Taste the sauce and adjust the salt or lime juice as needed according to your preference.

Assembly and Garnish

    Plate the Dish

    On a serving platter or individual plates, arrange the sliced potatoes.

    Add the Sauce

    Generously pour the Huancaina sauce over the sliced potatoes.

    Garnish

    Slice the hard boiled eggs and arrange them on top of the sauce. Add black olives around the dish and sprinkle with fresh cilantro if desired.
