Lomo Saltado Burrito Recipe
Lomo Saltado-style steak is stir-fried in a soy-based sauce with onion and tomatoes, then wrapped up in a large flour tortilla alongside cilantro rice and French fries.

Lomo Saltado

Prepare the Steak
Slice the flank steak into thin strips. Season with salt and pepper.

Cook the Vegetables
In a large skillet, heat olive oil over medium-high heat. Add sliced onions and cook until translucent, about 3 minutes. Add minced garlic and cook for another minute.

Stir-Fry the Steak
Increase the heat to high, add the steak strips, and stir-fry until browned, about 5 minutes. Add soy sauce and diced tomatoes, and stir to combine. Cook for an additional 2 minutes.

Finish the Dish
Remove from heat and toss in chopped cilantro. Set aside.

Cook the Rice
In a medium saucepan, combine rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18 minutes or until rice is cooked and water is absorbed.

Prepare the Potatoes
Peel and cut the potatoes into fries. Soak them in cold water for at least 30 minutes to remove excess starch.

Assemble the Burrito
On a large flour tortilla, layer cilantro rice, Lomo Saltado, and French fries. Fold in the sides and roll tightly. Repeat with remaining tortillas.

Cut the burritos in half and serve warm.
