Preparation

    Prepare the Ingredients

    Thinly slice the flank steak against the grain into strips. Slice the red onion into wedges and the tomatoes into chunks. Mince the garlic cloves.

    Cook the French Fries

    Prepare the French fries according to package instructions or fry them until golden brown in hot oil. Set aside.

Cooking

    Stir-fry the Beef

    In a large skillet or wok, heat a tablespoon of oil over high heat. Add the sliced flank steak and stir-fry for about 3-4 minutes until browned. Remove the beef from the pan and set aside.

    Cook the Vegetables

    In the same pan, add another tablespoon of oil. Add the sliced red onion and cook for 2-3 minutes until slightly softened. Then add the minced garlic and cook for an additional minute.

    Combine Ingredients

    Add the tomatoes back to the pan with the onions and garlic. Stir-fry for about 2 minutes until the tomatoes start to soften. Return the beef to the pan.

    Add Sauce

    Pour in the soy sauce, red wine vinegar, ground black pepper, and salt. Stir everything together and cook for another 1-2 minutes until heated through.

Serving

    Plate the Dish

    Serve the stir-fry immediately over a bed of cooked white rice. Top with French fries on the side. Optionally, garnish with chopped cilantro and aji amarillo paste if desired.
