Method
Prepare the Horchata

Soak the Rice
In a bowl, combine 1 cup of long-grain rice and enough water to cover it. Let it soak for at least 4 hours or overnight.

Blend the Rice
After soaking, drain the rice and place it in a blender with 4 cups of fresh water and 1 cinnamon stick. Blend until the rice is finely ground.

Strain the Mixture
Pour the blended mixture through a fine sieve or cheesecloth into a large bowl or pitcher to separate the rice solids from the liquid.

Make the Lemonade

Juice the Lemons
Roll the 6 fresh lemons on a counter to make them easier to juice. Cut them in half and juice them until you have about 1 cup of lemon juice.

Dissolve the Sugar
In a pitcher, combine the freshly squeezed lemon juice and 1 cup of granulated sugar. Stir until the sugar is completely dissolved.

Combine with Water
Add 4 cups of cold water to the pitcher and mix well. Taste and adjust sweetness if necessary.

Mix with Horchata
Combine the lemonade base with the prepared horchata mixture. Stir well to combine all flavors.
Serve the Lemonade

Garnish and Chill
Pour the lemonade horchata into glasses filled with ice. Garnish with fresh mint leaves and a slice of lemon if desired.
