Peel and slice plantains
Start by peeling the green plantains. To do this, cut off both ends of each plantain and make a slit along the length of the skin. Carefully remove the skin with your fingers or a knife. Once peeled, cut each plantain into 1-inch thick slices.

Heat the oil
In a large skillet or frying pan, heat the vegetable oil over medium heat. You want enough oil to cover the bottom of the pan by about a quarter of an inch.

First fry the plantains
Once the oil is hot, carefully add the plantain slices to the skillet in a single layer. Fry them for about 3-4 minutes on each side until they are lightly golden and tender but not browned. Remove them from the oil and place them on a paper towel-lined plate to drain excess oil.

Flatten the plantains
Using the bottom of a glass or a tostonera (a plantain press), gently flatten each fried plantain slice to about half an inch thick.

Second fry the plantains
Return the flattened plantains to the hot oil and fry them again for an additional 2-3 minutes on each side until they are golden brown and crispy. Make sure not to overcrowd the pan; you may need to do this in batches.

Season and serve
Once crispy, remove the tostones from the oil and place them on a fresh paper towel to drain. Sprinkle with salt and garlic powder while they are still hot. If desired, serve with lime wedges for squeezing over the top.
