Preparation of Tartar Sauce

Make the Tartar Sauce
In a bowl, combine the mayonnaise, finely chopped dill pickles, capers, lemon juice, and fresh dill. Mix well until all ingredients are thoroughly combined. Season with salt and pepper to taste. Refrigerate until serving.

Prepare the Squid
Ensure that the squid is cleaned and cut into rings. Pat them dry with paper towels to remove excess moisture, which helps in achieving a crispy texture.

Prepare the Coating
In a large bowl, mix the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper until well combined.

Coat the Squid
Toss the squid rings in the flour mixture until they are evenly coated. Shake off any excess flour.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches around 180°C (350°F).

Fry the Calamari
Carefully add the coated squid rings to the hot oil in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the fried calamari and transfer them to a paper towel-lined plate to absorb excess oil.

Serve the fried calamari hot with the prepared tartar sauce on the side for dipping.
