Mix in the flour
Once boiling, remove from heat and add the flour, stirring vigorously until a dough forms.

Add eggs
Allow the dough to cool slightly, then beat in the eggs, one at a time, until fully incorporated.

Pipe churros
Transfer the dough to a piping bag fitted with a star tip. Pipe 4-6 inch long strips of dough into the hot oil, cutting them with scissors.

Fry churros
Fry the churros until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.

Prepare the coating
In a shallow dish, combine the granulated sugar and ground cinnamon.

Add butter
Once caramelized, carefully add the butter and stir until melted and combined.

Finish the sauce
Slowly add the heavy cream while stirring, then add the vanilla extract. Let simmer for a few minutes until slightly thickened.

Serve the churro sticks warm with scoops of vanilla ice cream and drizzle with caramel sauce.
