    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to create fries.

    Fry the Potatoes

    Heat the vegetable oil in a large pot or deep fryer to 350°F (175°C). Carefully add the cut potatoes in batches and fry until golden brown and crispy, about 5-7 minutes. Remove from oil and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle with salt to taste.

Chorizo

    Cook the Chorizo

    In a skillet over medium heat, add the chorizo sausage links. Cook for about 5-7 minutes, turning occasionally until fully cooked and browned.

    Sauté the Vegetables

    Remove the chorizo from the skillet and set aside. In the same skillet, add minced garlic and diced red onion. Sauté for 3-4 minutes until the onion becomes translucent.

    Combine Ingredients

    Slice the cooked chorizo and add it back to the skillet with the sautéed garlic and onions. Stir to combine and heat through.

    Garnish

    Chop the cilantro and squeeze the lime over the chorizo mixture before serving.

    Assemble the Dish

    On a plate, layer a generous portion of fries, top with the chorizo mixture, and dollop sour cream on top.

    Slice the avocado and sprinkle feta cheese over the dish. Garnish with additional cilantro if desired.
