Prepare Chicken Salad

    Shred the Chicken

    Take the cooked chicken breast and shred it into small pieces using two forks or your hands.

    Mix Ingredients

    In a large mixing bowl, combine the shredded chicken, mayonnaise, aji amarillo paste, diced celery, and diced red onion. Mix well until all ingredients are evenly coated.

    Add salt and black pepper to the mixture, adjusting to taste. Stir well to combine.

    Refrigerate

    Cover the bowl with plastic wrap and refrigerate the chicken salad for at least 30 minutes to allow flavors to meld.

Prepare Ciabatta Bread

    Slice Ciabatta

    Slice the ciabatta rolls in half horizontally, creating a top and bottom for the sandwich.

    Spread Aji Amarillo Mayo

    Spread aji amarillo mayo on the inside of both halves of the ciabatta rolls.

Prepare Fries

    Preheat Oven

    Preheat your oven according to the instructions on the frozen French fries package.

    Spread the frozen French fries on a baking sheet, drizzle with olive oil, and sprinkle with salt. Bake according to package instructions until golden and crispy.

Assemble Sandwich

    Add Chicken Salad

    Remove the chicken salad from the refrigerator and stir once more. Spoon a generous amount of chicken salad onto the bottom half of each ciabatta roll.

    Top with Lettuce

    Place a lettuce leaf on top of the chicken salad on each sandwich, then place the top half of the ciabatta roll to close the sandwich.
