    Cook the Chicken

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Season the chicken breasts with salt, black pepper, ground cumin, garlic powder, and onion powder. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from heat and let it cool slightly.

    Shred the Chicken

    Once the chicken is cooled, shred it using two forks or your hands and set aside.

    Assemble the Quesadilla

    On a tortilla, spread a portion of shredded chicken and sprinkle with shredded cheese. If desired, add chopped fresh cilantro. Place another tortilla on top.

    Cook the Quesadilla

    In the same skillet, add a little more olive oil if necessary. Heat over medium heat. Cook the quesadilla for about 3-4 minutes on each side or until the tortillas are golden brown and the cheese is melted. Repeat this process for the remaining tortillas and filling.

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips to resemble fries. Rinse them in cold water to remove excess starch, then pat them dry with a towel.

    Fry the Potatoes

    In a deep fryer or a large pot, heat vegetable oil to 350°F (175°C). Carefully add the potato strips in batches and fry for about 5-7 minutes or until they are golden brown and crispy. Remove them from the oil and place on a plate lined with paper towels to drain excess oil.

    While the fries are still hot, sprinkle with salt to taste.
