Main Ingredients

Method

Preparation

  1. 1

    Boil the Corn

In a large pot, bring 8 cups of water to a boil. Add 2 cups of purple corn and boil for about 30 minutes, stirring occasionally.

  2. 2

    Add Fruits and Spices

After boiling the corn, add 1 cup of chopped pineapple, 1 chopped apple, 2 cinnamon sticks, and 4 cloves to the pot. Stir well.

  3. 3

    Simmer

Reduce the heat and let the mixture simmer for an additional 30 minutes. This allows the flavors to meld together.

  4. 4

    Strain the Mixture

After simmering, remove the pot from heat. Strain the mixture through a fine mesh sieve or cheesecloth into a large bowl or pitcher, discarding the solid ingredients.

  5. 5

    Sweeten the Drink

Add 1 cup of sugar to the strained liquid while it is still warm, stirring until fully dissolved.

  6. 6

    Add Lemon Juice

Once the sugar has dissolved, add 1 tablespoon of lemon juice to the mixture for a touch of acidity.

  7. 7

    Chill and Serve

Refrigerate the chicha morada for at least 2 hours before serving. Serve chilled over ice if desired.
