    Cook the Rice

    If you haven't done so already, cook 3 cups of white rice according to package instructions. Allow it to cool, preferably overnight, for the best texture.

    Prepare the Chicken

    Dice 1 cup of chicken breast into small cubes. Season with salt and pepper.

    Chop Vegetables

    Dice the green bell pepper and carrots into small, uniform pieces. Chop the green onions, reserving some for garnish.

    Heat the Oil

    In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.

    Cook Chicken

    Add the diced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
