Prepare the Fish
Rinse the fresh fish under cold water and pat it dry with paper towels. Cut the fish into small, bite-sized cubes, about 1/2 inch in size.

Combine Ingredients
In a large mixing bowl, combine the fish cubes, lime juice, minced garlic, diced red onion, chopped Peruvian chili peppers, and chopped cilantro.

Add salt and black pepper to taste. Mix all the ingredients gently but thoroughly to ensure the fish is evenly coated with the marinade.

Marinate
Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour. The acid from the lime juice will 'cook' the fish.
Serving

Serve the Ceviche
Once the fish is opaque and fully 'cooked' by the lime juice, remove the ceviche from the refrigerator. Serve it chilled in small bowls or on a plate, garnished with additional cilantro if desired.
