    Soak the Beans

    Rinse the black beans under cold water, removing any debris or damaged beans. Place the rinsed beans in a large bowl, cover with water, and soak overnight. If you’re short on time, you can perform a quick soak by boiling the beans for 2 minutes and then letting them sit for 1 hour.

    Combine Beans and Water

    After soaking, drain and rinse the beans again. In a large pot, combine the soaked beans and 3 cups of fresh water.

    Sauté Onion and Garlic

    Peel and finely chop the onion and garlic. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Then, add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Combine Ingredients

    Add the sautéed onion and garlic mixture to the pot with the beans. Stir in cumin, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low and cover.

    Simmer the Beans

    Simmer the beans for 1 to 1.5 hours, or until they are tender. Stir occasionally and add more water if necessary to keep the beans submerged.

    Season the Beans

    Once beans are tender, remove the pot from heat. Squeeze the juice of one lime into the pot and stir. Adjust seasonings to taste.

    Finely chop the fresh cilantro and stir it into the cooked beans before serving.
