Preparing the Anticuchos

Clean and Cut the Beef Heart
Trim any fat and connective tissue from the beef heart, then cut it into 1-inch cubes.

Marinate the Beef Heart
In a bowl, combine the red wine vinegar, minced garlic, cumin, paprika, salt, black pepper, and vegetable oil. Add the beef heart cubes and mix well. Cover and let marinate in the refrigerator for at least 2 hours, preferably overnight.

Soak the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
Grilling the Anticuchos

Preheat the Grill
Preheat your grill to medium-high heat.

Skewer the Meat
Thread the marinated beef heart cubes onto the soaked skewers, leaving a little space between each piece.

Grill the Anticuchos
Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the meat is cooked through and has a nice char.
Preparing the Spicy Sauce

Mix the Sauce Ingredients
In a small bowl, combine the aji panca paste, mayonnaise, lime juice, and salt. Mix thoroughly until smooth.

Plate the Anticuchos
Remove the skewers from the grill and let them rest for a few minutes. Serve the anticuchos hot with the spicy sauce on the side.
