Shredded chicken breast in a creamy aji amarillo sauce. Topped with a boiled egg and black olive. Served with white rice and boiled potatoes. Color texture and flavor in full harmony sauce. (It is not spicy).

Preparation

    Cook the Chicken

    In a pot, boil the chicken breasts in salted water for about 20-25 minutes or until fully cooked. Remove from water and let cool. Shred the chicken into bite-sized pieces.

    Prepare the Sauce

    In a blender, combine the aji amarillo paste, bread slices, milk, and chicken broth. Blend until smooth and set aside.

    Sauté Aromatics

    In a large skillet, heat vegetable oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another 2 minutes until fragrant.

    Combine Everything

    Pour the blended sauce into the skillet with the sautéed onions and garlic. Stir well to combine and let simmer for 5 minutes.

    Add Shredded Chicken

    Add the shredded chicken to the sauce. Stir to coat the chicken evenly and let cook for an additional 10 minutes, allowing the flavors to meld.

Serving

    Plate the Dish

    Serve the creamy aji de gallina over a bed of cooked white rice. Arrange the boiled potatoes on the side.

    Garnish

    Slice the boiled eggs in half and place them on top of the aji de gallina. Add black olives for garnish.
