    Prepare the Filling

    In a skillet over medium-high heat, add a splash of oil. Season the flank steak with salt and pepper, then sear it on all sides until browned. Remove from the pan and let it rest.

    Cook Vegetables

    In the same skillet, add chopped onion, red bell pepper, and minced garlic. Sauté until softened, about 5-7 minutes.

    Shred the Steak

    Once the steak has cooled, shred it into bite-sized pieces and add it to the skillet with the vegetables. Mix well.

    Make Guajillo Crema

    Soak guajillo peppers in hot water for 15 minutes. Once softened, blend with sour cream, lime juice, cumin, salt, and black pepper until smooth.

    Fill the Empanadas

    Using ready-made or homemade empanada dough, place a spoonful of the steak filling in the center, fold, and seal the edges with a fork.

    Cook the Empanadas

    Fry empanadas in hot oil until golden brown on both sides, about 3-4 minutes per side. Alternatively, bake in a preheated oven at 375°F (190°C) for 20-25 minutes.

    Serve hot with guajillo crema drizzled on top or on the side for dipping.
