    Prepare the Potato Base

    Preheat the oven to 400°F (200°C). Peel and thinly slice the potatoes. Place them in a large bowl of cold water to prevent browning.

    Sauté Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the sliced mushrooms and cook for about 5 minutes until soft. Stir in the fresh spinach and cook until wilted. Season with salt and black pepper. Remove from heat.

    Assemble the Tart

    Drain the potato slices and layer half of them in a greased tart pan. Spread the sautéed spinach and mushroom mixture over the potatoes. Then, layer the remaining potato slices on top. Crumble the burrata cheese over the tart.

    Bake

    Cover the tart with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and golden.

    Serve

    Remove from the oven and let it cool for a few minutes. Drizzle with hot tomato crema before serving.
