    Prepare the Polenta Fry

    In a saucepan, bring milk to a boil. Gradually whisk in cornmeal, stirring constantly until thickened. Stir in grated Manchego cheese until melted. Spread the mixture onto a greased baking sheet and let cool. Once set, cut into fries and fry in hot oil until golden.

    Cook the Skirt Steak

    Season the skirt steak with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Cook the steak for 3-4 minutes on each side for medium-rare, then let rest before slicing.

    Sauté the Broccolini

    In the same skillet, add a bit more olive oil if needed and sauté the broccolini for 4-5 minutes until tender. Season with salt and pepper.

    Make the Hot Tomato Crema

    In a small saucepan, combine tomato sauce, minced jalapeños, minced garlic, and lime juice. Simmer for 5-7 minutes. Blend until smooth if desired.

    Prepare the Jalapeño Butter

    In a small bowl, mix together softened butter and chopped cilantro and jalapeños. Season with salt to taste.

    Serve the Dish

    On a plate, serve the sliced skirt steak with polenta fries, sautéed broccolini, drizzle with hot tomato crema, and top with jalapeño butter.
