Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Season the pork belly with salt and black pepper on both sides. Place it in a roasting pan and roast it for 2 to 2.5 hours until tender.

Cook the Potatoes
While the pork belly is cooking, peel and dice the Yukon Gold potatoes. Boil them in salted water for about 15-20 minutes or until fork-tender. Drain and set aside.

Sauté the Spinach
In a large skillet, heat a tablespoon of oil over medium heat. Add the fresh spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.

Prepare the Chipotle Sauce
In a small saucepan, heat the chipotle sauce over low heat until warmed through. Adjust seasoning if necessary.

Finish the Pork Belly
Once the pork belly is done roasting, remove it from the oven and let it rest for 10-15 minutes. Slice it into bite-sized pieces.

Plate the Dish
On a serving plate, arrange the sautéed spinach, boiled potatoes, and pork belly slices. Drizzle with chipotle sauce and chamoy. Garnish with sliced scallions and Fresno peppers.
