    Prepare the Lamb

    In a large bowl, mix together olive oil, minced garlic, cumin, salt, and black pepper. Add the lamb shoulder and coat it well with the marinade. Cover and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

    Cook the Lamb

    Preheat the oven to 325°F (160°C). Place the marinated lamb in a roasting pan and cover it with foil. Roast for about 2.5 to 3 hours or until the lamb is tender and easily pulls apart with a fork.

    Add Green Chiles

    Remove the foil in the last 30 minutes of cooking. Add the roasted green chiles on top of the lamb and let them roast along with the meat until heated through.

    Prepare Spoonbread

    While the lamb is cooking, prepare the spoonbread according to your favorite recipe or use a store-bought option.

    Serve

    Once the lamb is done, shred it using two forks. Serve the shredded lamb on a bed of spoonbread, topped with pickled white onions, sliced fresno chiles, and chopped cilantro. Drizzle with hot tomato crema if desired.
