    Prepare the Dough

    In a medium saucepan, combine water, butter, 2 tablespoons of sugar, and salt over medium heat. Stir until the mixture comes to a boil. Remove from heat and stir in flour until the mixture forms a ball.

    Add Eggs

    Let the dough cool for about 5 minutes, then beat in the eggs one at a time until the dough is smooth and shiny.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil to 375°F (190°C).

    Pipe the Churros

    Transfer the dough to a piping bag fitted with a star tip. Pipe 4-6 inch strips of dough into the hot oil, cutting them with scissors as you go.

    Fry the Churros

    Fry the churros until golden brown, about 2-3 minutes on each side. Remove with a slotted spoon and drain on paper towels.

    Coat with Sugar

    Mix the granulated sugar and cinnamon in a shallow bowl. Roll the warm churros in the sugar mixture to coat.

    Serve the churros warm with dulce de leche for dipping.
