    Prepare the base

    In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes, until the vegetables are softened and the onion is translucent.

    Add the garlic

    Stir in the minced garlic and cook for another minute until fragrant.

    Cook the Wagyu beef

    Add the ground Wagyu beef to the pan. Cook for about 8-10 minutes, breaking it up with a spoon until it’s browned all over.

    Deglaze with wine

    Pour in the red wine, scraping the bottom of the pan to release any browned bits. Allow it to simmer for about 2-3 minutes until the wine reduces slightly.

    Add tomatoes and broth

    Stir in the crushed tomatoes, beef broth, bay leaves, and dried oregano. Season with salt and black pepper to taste.

    Simmer the sauce

    Bring the mixture to a gentle simmer. Reduce the heat to low and let it cook uncovered for about 45 minutes, stirring occasionally until the sauce thickens.

    Finish and serve

    Remove the bay leaves. Serve the Bolognese sauce over gluten-free pasta or zucchini noodles, garnished with fresh basil.
