Prepare the Filling
In a large skillet over medium heat, cook the diced onion until translucent. Add the minced garlic and ground pork, cooking until the pork is browned. Stir in the diced potatoes, thyme, sage, salt, and pepper. Cook for an additional 10 minutes until the potatoes are tender. Remove from heat and let cool.

Make the Crust
In a mixing bowl, combine gluten-free flour, cold butter, and salt. Mix until crumbly. Gradually add cold water until a dough forms. Divide the dough into two halves, shape into discs, and refrigerate for 30 minutes.

Assemble the Tortiere
Preheat the oven to 375°F (190°C). Roll out one disc of dough and place it into a pie dish. Fill with the meat mixture, then roll out the second disc and place over the filling. Seal the edges and cut a few slits in the top to allow steam to escape.

Bake in the preheated oven for 45-50 minutes or until the crust is golden brown. Let cool for 10-15 minutes before serving.
