Prepare the French Fries
Preheat your oven or fryer according to the package instructions for the frozen French fries. Cook the fries until golden and crispy.

Make the Green Chile Sauce
In a saucepan, melt the bacon fat over medium heat. Add the green chile sauce and stir to combine. Let it simmer for about 5 minutes until heated through.

Assemble the Cheese Fries
Once the fries are cooked, place them on a serving platter. Pour the green chile sauce over the fries, then sprinkle the shredded cheddar cheese generously on top.

Melt the Cheese
If desired, place the assembled fries under a broiler for 2-3 minutes to melt the cheese further.

Remove from the oven, garnish with chopped green onions, and season with salt and black pepper to taste. Serve immediately.
