Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into even-sized strips, about 1/4 inch thick.

Soak the Potatoes
Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with a clean kitchen towel.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Potatoes
Carefully add a batch of the dried potato strips to the hot oil. Fry them for about 4-6 minutes or until golden brown and crispy. Do not overcrowd the pot; fry in batches if necessary.

Drain and Season
Once cooked, remove the fries from the oil and drain them on paper towels. While still hot, season with salt, black pepper, and garlic powder to taste.
