    Prepare the Bacon

    In a large skillet over medium heat, cook the bacon until crispy. Remove from the skillet and set aside on a plate lined with paper towels.

    Sear the Pork Chops

    In the same skillet with the bacon drippings, season the pork chops with salt and pepper. Sear them for about 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and let them rest.

    Cook the Vegetables

    Add olive oil to the skillet if needed, then add the garlic scapes and sauté for 2-3 minutes until fragrant. Add the kale and continue cooking until wilted, about 4-5 minutes. Stir in the cannellini beans and lemon juice, cooking until heated through.

    Combine and Serve

    Crumble the crispy bacon and mix it into the kale and beans. Serve the pork chops on plates with the sautéed kale and bean mixture on the side.
