    Cook the Lobster

    Bring a large pot of salted water to a boil. Add lobster tails and cook for about 8-10 minutes until they are bright red and cooked through. Remove and let cool before slicing.

    While the lobster cools, blanch the dragon beans in boiling water for 3-4 minutes until tender. Drain and immerse in cold water to stop cooking.

    Halve the cherry tomatoes and set aside.

    Hard boil the eggs by placing them in boiling water for 9-12 minutes. Remove, cool, peel, and cut into quarters.

    In a large bowl, combine the lobster, dragon beans, cherry tomatoes, black olives, and hard-boiled eggs.

    In a separate bowl, whisk together olive oil, neonata, salt, and pepper. Pour over the salad and toss gently.
