Prepare the Duck
Score the skin of the duck breasts in a criss-cross pattern. Season both sides with salt and black pepper. Heat a skillet over medium heat and place the duck breasts skin-side down. Cook for about 6-8 minutes until the skin is crispy and golden brown.

Cook the Duck
Flip the duck breasts and cook for another 3-5 minutes for medium-rare. Remove from the heat and let rest for 5 minutes before slicing.

Cook the Rice
Add the bamboo rice to the pan and stir to coat. Pour in the chicken or duck stock. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.

Finish the Dish
Stir in fresh thyme and butter to the rice. Slice the duck and serve over the bamboo rice, drizzled with jus made from the duck drippings.
