1. Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and place them on a paper towel to drain excess fat. Once cooled, crumble the bacon into small pieces.

2. Sauté the Vegetables

In the same skillet, add olive oil and heat over medium heat. Add the chopped red onion and sauté for 2-3 minutes until translucent. Then, add the fresh spinach and cook until wilted, about 2 minutes.

3. Prepare the Eggs

In a bowl, crack the eggs and whisk them together with salt and black pepper until well combined.

4. Cook the Omelette

Pour the egg mixture into the skillet over the sautéed spinach and onions. Cook for about 2-3 minutes until the edges start to set. Sprinkle the crumbled bacon and Swiss cheese over one half of the omelette.

5. Fold and Serve

Using a spatula, carefully fold the omelette in half over the filling. Cook for another 1-2 minutes until the cheese is melted and the egg is fully cooked. Slide the omelette onto a plate and serve immediately.
