Method

Preparing the Potatoes

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Potatoes

    Scrub the russet potatoes under cold water to remove any dirt. Pat them dry with a kitchen towel.

    Bake the Potatoes

    Pierce each potato several times with a fork. Rub the potatoes with olive oil, and sprinkle with salt and black pepper. Place them directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.

Assembling the Skins

    Scoop Out the Flesh

    Once the potatoes are cooked, allow them to cool slightly. Cut each potato in half lengthwise, and carefully scoop out most of the flesh, leaving about 1/4 inch of potato on the skin.

    Prepare for Baking

    Brush the insides of the potato skins with a little more olive oil, and sprinkle with salt and pepper.

    Bake the Skins

    Place the potato skins cut side up on a baking sheet. Bake in the oven for an additional 10-15 minutes until they are crispy.

Adding Toppings

    Add Cheese and Bacon

    Remove the potato skins from the oven. Sprinkle shredded cheddar cheese and crumbled bacon evenly over each skin.

    Melt the Cheese

    Return the loaded potato skins to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Serving

    Garnish and Serve

    Remove the potato skins from the oven. Top with sliced green onions and serve immediately with a side of sour cream.
