    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Potatoes

    Wash the russet potatoes thoroughly under cold water. Pat them dry with a towel.

    Bake the Potatoes

    Pierce each potato several times with a fork. Place them on a baking sheet and bake in the preheated oven for about 45-60 minutes, or until they are tender.

Assembling the Potato Skins

    Scoop Out the Potatoes

    Once the potatoes are cool enough to handle, cut each potato in half lengthwise. Carefully scoop out some of the flesh, leaving about 1/4 inch of potato on the skin. Reserve the scooped-out potato for another use.

    Season and Oil the Skins

    Brush the potato skins with olive oil and sprinkle with salt.

    Bake the Skins

    Place the potato skins face down on the baking sheet and bake for an additional 10-15 minutes, or until they are crispy.

    Add Toppings

    Remove the potato skins from the oven. Flip them over and fill each skin with shredded cheddar cheese and crumbled bacon.

    Final Bake

    Return the potato skins to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly.

Serving

    Garnish and Serve

    Remove the potato skins from the oven. Top with sliced green onions and serve immediately with a side of sour cream for dipping.
