    Prepare the Vegetables

    Preheat your oven to 400°F (200°C). Slice the carrots and zucchini into thin strips. Wash and scrub the fingerling potatoes, then cut them in half lengthwise.

    Cook the Potatoes

    Toss the fingerling potatoes with 1 tablespoon of olive oil, salt, and black pepper. Spread them on a baking sheet and roast in the oven for about 25-30 minutes, or until golden brown and tender.

    Sear the Steak

    While the potatoes are roasting, heat a skillet over medium-high heat. Rub the Wagyu flank steak with the remaining olive oil, salt, black pepper, and fresh rosemary. Sear the steak for about 4-5 minutes per side for medium-rare, or until desired doneness.

    Prepare the Glaze

    In the same skillet used for the steak, add the glacé and bring to a gentle simmer, scraping up any brown bits from the steak. Allow to reduce slightly.

    Serve

    Slice the cooked flank steak against the grain. Arrange the carrots, zucchini, and fingerling potatoes on a plate, top with sliced steak, and drizzle with the reduced glacé. Crumble Delft blue cheese over the top before serving.
