    Prepare the Slaw

    In a large bowl, combine the shredded purple cabbage, napa cabbage, julienned carrots, sliced red bell pepper, sliced poblano pepper, and chopped bok choy. Toss well to mix the vegetables evenly.

    Make the Orange Carrot Puree

    Peel and chop the carrots, then boil them in water until tender, about 10 minutes. Drain the carrots and blend them with the juice of the oranges until smooth. Season with salt and pepper to taste.

    Cook the Halibut

    Heat olive oil in a large skillet over medium-high heat. Season the halibut fillets with salt and black pepper. Once the oil is hot, add the halibut fillets and sear for about 4-5 minutes on each side or until they are golden brown and cooked through.

    Plate the seared halibut alongside the purple and napa cabbage slaw. Drizzle the orange carrot puree around the plate for a beautiful presentation.
