Prepare the Potatoes
Peel the potatoes and cut them into thick slices or wedges. Soak in cold water for at least 30 minutes to remove excess starch.

Make the Batter
In a mixing bowl, combine flour, cornstarch, baking powder, and a pinch of salt. Gradually whisk in cold sparkling water until the batter is smooth and thick.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Walleye
Dip each walleye fillet into the batter, ensuring it is fully coated. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes or until golden brown. Remove and drain on paper towels.

Remove the potatoes from the water and dry them thoroughly. Fry the potato slices in the same oil in batches for about 3-4 minutes until they puff up and are golden. Drain on paper towels and season with salt.
