Taquitos Dorados Recipe
Com tortillas rolled and filled with beef or chicken, deep fried. Served with guacamole, sour cream, queso fresco, and pico de gallo.

Filling Preparation

Cook the Meat
In a medium skillet over medium heat, add 1 tablespoon of vegetable oil. Once hot, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.

Add the Meat and Spices
Add the ground beef or shredded chicken to the skillet, breaking it apart with a spatula. Stir in the cumin, chili powder, salt, and pepper. Cook until the meat is fully cooked through, about 7-10 minutes. Remove from heat and let cool slightly.

Heat the Tortillas
In a separate skillet, heat the corn tortillas one at a time for about 30 seconds on each side until they are warm and pliable. This will make them easier to roll without tearing.

Fill the Tortillas
Take a warm tortilla and place about 2 tablespoons of the meat filling in the center. Roll it tightly, tucking in the sides as you go. Secure with a toothpick if necessary. Repeat with remaining tortillas and filling.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test if the oil is ready by dropping a small piece of tortilla in; it should sizzle immediately.

Fry the Taquitos
Carefully place a few taquitos in the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Plate and Serve
Serve the taquitos hot with guacamole, sour cream, queso fresco, and pico de gallo on the side for dipping.
