Preparation of Pan de Elote

1. Preheat the Oven

Preheat your oven to 350°F (175°C).

2. Blend the Corn

In a blender, combine the sweet corn kernels, eggs, milk, and melted butter. Blend until smooth.

3. Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.

4. Combine Mixtures

Pour the blended corn mixture into the bowl with the dry ingredients. Stir gently until just combined.

5. Pour into Baking Dish

Grease a baking dish with butter. Pour the batter into the prepared dish.

6. Bake

Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

7. Cool

Remove from the oven and let the pan de elote cool in the baking dish for 10 minutes before transferring to a wire rack.

8. Mix Ingredients

In a mixing bowl, combine the sweetened condensed milk, heavy cream, and vanilla extract. Mix well until smooth.

9. Chill

Cover the bowl and chill in the refrigerator for at least 1 hour.

10. Serve

Scoop the chilled nieve on top of warm slices of pan de elote to serve.
