Crust Preparation

1. Make the Crust

In a large bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated with butter.

2. Form the Crust

Press the crumb mixture firmly into the bottom and up the sides of a 9-inch springform pan to form an even layer. Use the back of a measuring cup to compact the crumbs.

3. Pre-bake the Crust

Preheat the oven to 350°F (175°C). Bake the crust in the preheated oven for 10 minutes, then remove and allow to cool while preparing the filling.

4. Prepare the Filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

5. Add Sugar and Sour Cream

Gradually add the granulated sugar and sour cream to the cream cheese, mixing until well combined.

6. Incorporate Other Ingredients

Add the vanilla extract, eggs (one at a time), lemon zest, and lemon juice. Continue to mix until the filling is smooth and fully incorporated.

7. Pour into Crust

Pour the cheese filling into the cooled graham cracker crust. Smooth the top with a spatula.

Baking

8. Bake the Cheesecake

Bake the cheesecake in the oven at 325°F (163°C) for 55-60 minutes or until the center is set and only slightly jiggly.

9. Cool and Chill

Once baked, turn off the oven and crack the door open. Allow the cheesecake to cool in the oven for 1 hour. Then refrigerate for at least 4 hours, preferably overnight.

Carefully remove the sides of the springform pan. Slice the cheesecake and serve chilled, optionally garnished with fresh fruit or whipped cream.
