Tortilla Preparation

Mix the Dough
In a large bowl, combine the corn masa harina and salt. Gradually add water while mixing with your hands until the dough becomes smooth and pliable. It should not be sticky.

Shape the Tortillas
Divide the dough into 12 equal portions and roll each portion into a ball. Flatten each ball with a tortilla press or by hand into a thick disc about 4 inches in diameter.

Cook the Tortillas
Heat a non-stick skillet or griddle over medium-high heat. Cook each tortilla for about 2-3 minutes on each side until lightly golden and cooked through. Remove and set aside.

Prepare the Sopes
Using your fingers, gently pinch the edges of each tortilla to create a small rim, forming a shallow cup shape.

Add Beans
Spread about 2 tablespoons of refried beans in the center of each tortilla, smoothing it out with the back of a spoon.

Add Meat
Top the beans with about 2 tablespoons of cooked ground meat, evenly distributing it across each sope.

Spoon about 2 tablespoons of salsa over the meat, ensuring each sope is generously topped.

Sprinkle crumbled queso fresco and chopped cilantro on top. Drizzle with sour cream for added flavor.
