Preparation of Cheese Mixture

Cook the Chorizo
In a skillet over medium heat, cook the chorizo until it is browned and cooked through, about 5-7 minutes. Drain any excess fat and set aside.

Prepare the Cheese
In a large bowl, combine the Chihuahua cheese, Monterey Jack cheese, and cream cheese. Mix well until evenly blended.

Add Jalapeños
Finely chop the jalapeño peppers and add them to the cheese mixture. Stir until incorporated.

Combine with Chorizo
Fold the cooked chorizo into the cheese mixture, ensuring it is evenly distributed throughout.
Cooking the Queso Fundido

Prepare the Oven
Preheat your oven to 350°F (175°C).

Transfer to Baking Dish
Transfer the cheese and chorizo mixture to an oven-safe baking dish, spreading it evenly.

Place the baking dish in the oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly.

Warm the Tortillas
While the queso fundido is baking, warm the flour tortillas in a skillet over low heat or wrap them in foil and place them in the oven for the last 5 minutes of baking.

Once the queso fundido is ready, remove it from the oven. Serve hot, garnished with cilantro, diced tomatoes, and a dollop of sour cream if desired. Enjoy with the warm tortillas.
