Quesadilla Preparation

Heat the Skillet
Place a non-stick skillet over medium heat and add 1 tablespoon of olive oil, allowing it to heat for about 1 minute.

Prepare the Quesadilla
Lay one flour tortilla flat in the skillet and sprinkle 1 cup of shredded Monterey Jack cheese evenly over the tortilla.

Top with Another Tortilla
Place the second flour tortilla on top of the cheese-covered tortilla.

Cook the Quesadilla
Cook for about 3-4 minutes or until the bottom tortilla is golden brown. Carefully flip the quesadilla over using a spatula and cook for an additional 3-4 minutes, until the other side is golden brown and the cheese is melted.

Remove and Slice
Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Slice it into wedges.
Serving

Plate the Quesadilla
Place the sliced quesadilla on a serving plate.

Add Condiments
Serve with a cup of sour cream and a cup of guacamole on the side for dipping.
