Prepare the Chicken
Rinse the chicken breasts under cold water and pat them dry with a paper towel. Season both sides with salt and black pepper.

Chop Vegetables
Dice the onion, chop the garlic cloves, and chop the bell pepper into strips. Cut the tomatoes into quarters.

Chop Herbs
Rinse the cilantro under cold water, shake off excess water, and roughly chop.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until it becomes translucent. Add the garlic and bell pepper, and continue to sauté for another 3-4 minutes.

Add the Chicken
Push the sautéed vegetables to the side of the skillet. Add the seasoned chicken breasts to the skillet and sear them for about 4-5 minutes on each side until they are golden brown.

Add Remaining Ingredients
Add the chopped tomatoes, chicken broth, cumin, paprika, chili powder, and chopped cilantro to the skillet. Stir to combine all ingredients.

Simmer the Chicken
Bring the mixture to a gentle boil, then reduce the heat to low. Cover the skillet and let it simmer for 20-25 minutes, or until the chicken is cooked through and tender.
