Method

Preparing the Cake

  1. 1

    Preheat Oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.

  3. 3

    Cream Butter and Sugar

In another bowl, cream together the softened butter and granulated sugar until light and fluffy.

  4. 4

    Add Eggs and Vanilla

Beat in the eggs one at a time, followed by the vanilla extract, mixing well after each addition.

  5. 5

    Combine Mixtures

Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.

  6. 6

    Bake the Cakes

Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

  7. 7

    Cool the Cakes

Allow the cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.

Assembling the Cake

  1. 8

    Prepare the Cajeta Filling

Once the cakes are completely cooled, spread a layer of cajeta on top of one cake layer.

  2. 9

    Stack the Layers

Place the second cake layer on top of the first, pressing down gently to secure.

Making the Frosting

  1. 10

    Whip the Cream

In a mixing bowl, whip the heavy cream until soft peaks form.

  2. 11

    Add Sugar and Vanilla

Gradually add the powdered sugar and vanilla extract while continuing to whip until stiff peaks form.

Frosting the Cake

  1. 12

    Frost the Cake

Spread the whipped cream frosting over the top and sides of the stacked cake.

Decorating the Cake

  1. 13

    Add Decoration

Sprinkle chopped nuts on top, if desired, and drizzle additional cajeta over the entire cake for a beautiful finish.
