Gorditos De Camaron Recipe
Rolled flour tortilla filled with shrimp, tomatoes, onions, jalapeño, deep fried and covered with cheese. Served with guacamole.

Prepare the Filling

Cook the Shrimp
In a skillet over medium heat, add a splash of oil. Once hot, add the shrimp and cook until they turn pink and opaque, about 3-4 minutes.

Add Vegetables
Add the diced tomatoes, chopped onion, jalapeño, minced garlic, lime juice, salt, and pepper to the skillet. Sauté for an additional 3-4 minutes until the vegetables are softened. Remove from heat and let cool.
Assemble the Gorditos

Fill the Tortillas
Take a flour tortilla and place a generous amount of the shrimp filling in the center. Fold the sides over the filling and then roll it up tightly from the bottom to create a sealed gordito.

Repeat
Repeat this process with all tortillas and filling.
Fry the Gorditos

Heat Oil
In a deep pan or fryer, heat the vegetable oil to 180°C (350°F).

Fry the Gorditos
Carefully add the rolled gorditos to the hot oil and fry for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.

Add Cheese
While still hot, sprinkle shredded cheese over the gorditos and allow it to melt slightly.
