Preparation
- 1
Prepare the Filling
In a large skillet over medium heat, add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onion is translucent, about 5-7 minutes.
- 2
Season the Meat
Stir in the cumin, chili powder, salt, and black pepper. Mix well and cook for an additional 2 minutes. Remove from heat and let cool slightly.
Assembly
- 3
Prepare the Tortillas
Warm the corn tortillas in a microwave or on a skillet until pliable, about 30 seconds each. This will make them easier to roll.
- 4
Fill the Tortillas
Place about 2-3 tablespoons of the beef mixture in the center of each tortilla. Sprinkle with cheese and roll the tortillas tightly.
- 5
Arrange in Baking Dish
Place the rolled tortillas seam-side down in a greased 9x13 inch baking dish.
Baking
- 6
Add Sauce
Pour the enchilada sauce evenly over the top of the rolled tortillas. Sprinkle the remaining cheese on top.
- 7
Bake
Cover the baking dish with aluminum foil and bake in a preheated oven at 375°F (190°C) for 20 minutes. Remove the foil and bake for another 10 minutes until the cheese is bubbly and golden.
Serving
- 8
Garnish and Serve
Remove from the oven and let cool for a few minutes. Serve with sour cream, chopped cilantro, and sliced jalapeños on top.
