Filling Preparation

    Cook the Meats

    In a large skillet over medium heat, add the ground beef and ground chicken. Cook until browned, about 6-8 minutes, breaking the meat apart with a spatula.

    Add Aromatics

    Add the chopped onion and minced garlic to the skillet. Sauté for another 2-3 minutes until the onion is translucent.

    Season the Filling

    Sprinkle in cumin, chili powder, salt, and pepper. Stir well to combine and cook for an additional 2 minutes. Remove from heat and let cool slightly.

    Mix in Cheese

    Once the filling is slightly cooled, add in 1.5 cups of shredded cheese and mix well.

    Prepare the Sauce

    In a medium saucepan, heat olive oil over medium heat. Stir in tomato sauce, chicken broth, and lime juice. Simmer for 5 minutes. Remove from heat and stir in chopped cilantro.

    Warm the Tortillas

    In a dry skillet, warm each corn tortilla for about 30 seconds on each side until pliable.

    Fill the Tortillas

    Spoon about 2-3 tablespoons of the meat and cheese filling onto the center of each tortilla. Roll tightly to enclose the filling.

    Arrange in Baking Dish

    Place the filled tortillas seam-side down in a greased baking dish. Pour the prepared sauce evenly over the tortillas.

    Add Remaining Cheese

    Top with the remaining 0.5 cups of shredded cheese.

    Bake

    Preheat the oven to 350°F (175°C). Bake uncovered for 20-25 minutes or until the cheese is bubbly and golden.

    Remove from the oven and let cool slightly. Serve topped with shredded lettuce, slices of avocado, and a dollop of sour cream.
